Wolf Blass ‘Find Your Flavour’ Wine Pairing with One Michelin Star Restaurant Labyrinth

There is no right or wrong in wine pairings. Chris Hatcher, Wolf Blass Chief Winemaker, shared with us his thoughts on wine pairings during a recent wine tasting masterclass at restaurant Labyrinth.

Leading Australian wine brand, Wolf Blass, has launched a regional campaign to encourage consumers, like us, to celebrate the taste of wine with Asian cuisine. Titled ‘Find Your Flavour‘, this regional campaign is spearheaded by the Wolf Blass brand in partnership with the Michelin Guide. As we taste exquisite dishes whipped up from the kitchen of restaurant Labyrinth, four different Wolf Blass wines accompanied the meal.

The four wines are the Gold Label Chardonnay, Gold Label Cabernet Sauvignon, Gold Label Shiraz and Grey Label Cabernet Shiraz.

Rather than looking at the protein, Wolf Blass reinvents the rules of food and wine pairing by placing a focus on sauces in Asian cuisine.

The one Michelin-starred restaurant Labyrinth presents a modern expression of local dishes in unexpected textures and flavours.

As expected of restaurant Labyrinth, the dishes continue to surprise with innovative creations of ‘takoyaki’ oyster, waffle with chicken liver spread, clay pot chicken rice and a kaya toast ice cream lavished with caviar.

The sauces, on the other hand, plays a part in each plate, ranging from the creamy Nasturtium puree and sweet goji berry jam to peanut sauce and spicy XO sambal.

It was interesting to savour the different wines from Wolf Blass with the food. And of course, sharing our favourite pairings with each other across the table!
