Tsuta’s New Menu offers Crab Soba, Hamburg Mazesoba & 1 for 1 for selected dishes till 3 Nov

Brace yourselves; Tsuta, the world’s first Michelin-starred ramen eatery will be unveiling its newly revamped menu on 29 October, with over 80% new items gracing tables at its Funan Mall, VivoCity, and Jewel Changi Airport outlets.

Not one to rest on his laurels, Chef Yuki Onishi took advantage of the lull period resulting from the Covid-19 pandemic to innovate and elevate lip-smacking delicious flavours that put on a new spin on this beloved staple. Expect to see new and improved versions of Tsuta’s Shoyu Soba and Shio Soba, as well as new creations that reflect the changing palate. Health-conscious diners will also be delighted to find that Tsuta has kept to its zero MSG and no artificial flavourings philosophy.

Savour a taste of the ocean in the Crab Soba ($16.80 with Char Siu, $19.80 with Premium Char Siu, and $23.80 with Char Siu and Crab Shell), which boasts an ultra rich broth, made with fresh mud crabs boiled two days. Complete with snow crab meat, Iberico pork belly, and Kurobota pork loin, the highest upgrade for Tsuta’s first crab soba yields complex flavours and fragrant ingredients weaved together to give your a feast for the senses.

An homage to Chef Yuki Onishi’s favourite band, the R.H.C.P. Mazesoba ($11.80) puts a delicious spin on two classic Japanese dishes, hamburg and mazesoba. Drenched in house-made cheese sauce, tomato sauce, and minced beef, the resulting aromas and tastes bring to mind a freshly grilled hamburger. The noodles, made in-house from a blend of four types of specially selected wheat and whole grain flours, yield a firm bite, almost similar to al-dente pasta.

Indulge your cravings for mala cuisine with a Soboro Meshi ($6, +$0.80 for onsen egg), also known as mala lu rou fan. This Chinese-inspired dish blends everyone’s favourite spicy-numbing aroma from the mala minced pork and crushed peanuts on Japanese rice. A true treat for spice lovers! If the distinct spicy numbness puts you off, take comfort in the Teriyaki Chicken Bao ($2.80 for 1pc, $6.80 for 3pcs), where tender, chicken thigh is expertly flavoured with house-made mayonnaise and teriyaki sauce blend. Best enjoyed hot!

The classic Shoyu Soba with Char Siu ($16, +$2.80 for Iberico pork belly or Kurobuta pork loin) makes a reappearance in Tsuta’s new menu. The full-bodied flavours of the noodles and char siu are elevated by the balsamic black truffle sauce, which adds a rich aftertaste to the dish.

Alongside Tsuta’s biggest menu revamp to date, diners will also find that Tsuta has debuted a brand new logo. Taking after the shape of an ivy leaf which represents the brand name and family crest, Tsuta’s new logo pays homage to the founder’s background in fashion, as well as its dedication to serving unique and sophisticated noodles and excellent product and service.
