The Dark Gallery Dessert Appreciation Workshop – New Single Origin Pastries Platter & Cold Brew Cacao Tea at Ngee Ann City

The Dark Gallery at Takashimaya hosted its first ever Southeast Asian Chocolate and Dessert Appreciation Workshop on 18th October 2018.

A representative from Lemuel Chocolate had a short session with us on the various chocolate tasting notes and also gave us insights in the chocolate making process, from bean to bar.

We started with the Cold Brew Cacao Tea $6.50, a drink smooth on the throat, and an alternative to iced coffee, for those avoiding large caffeine intake in the evenings.

Introducing the Single Origin Pastries Platter $14, launched starting month of November this year, this platter featured five different chocolates made from Southeast Asian Cacao.

Recommended to begin in a clockwise direction, we tried the Island Chocolate Tart made from chocolate in Bali.

The 68% dark chocolate ganache was thick and gooey in the crumbly crust while the raspberry on top pierced through the chocolaty richness with its acerbity.

The chocolate, from Solok, Indonesia, was transformed into a layered Meringue Parfait, marrying sweetness with the bitterness.

My favourite was actually chewing on the chocolate chunks from Chiang Mai. The 70% dark chocolate had just the right kind of depth and it made a spicy pairing with the Panna Cotta, graced with coconut sugar and ginger.

The other two dainty desserts were the rather sweet Ganache Cake with chocolates from Pahang and the lighted salted Davao Chocolate Baton.
