Seizan Uni Ramen – Singapore’s First Sea Urchin Ramen at Picnic, Wisma Atria

Seizan Uni Ramen is a modern ramen concept developed out of a collaboration between Picnic Food Park at Wisma Atria and two Michelin-starred Seizan from Tokyo.

While uni ramen and even uni hotpot is a common sight in Japan, the first-ever presence of the uni ramen in Singapore is probably an eye-opener to many locals here.

Seizan Uni Ramen offers a total of three curated ramen dishes with the dashi as the base stock. Back in Seizan, Tokyo, the same dashi is also the foundation for most of the dishes served in the restaurant. A labour-intensive ten-hour process is required to complete the dashi, using mainly kombu, bonito and maguro.

The highlight of the three ramen is the Uni Ramen $21. Made from premium Japanese bafun uni, this luxurious delicacy is added to the signature dashi, followed by a little cream and milk to create a deep orange and buttery uni soup. Each bowl is topped with the tender homemade char shu, a whole soft-centre egg, leek, spinach, spring onions and nori sheets.

Taste-wise, it is surprisingly not as overwhelming as thought. The broth is rich with the natural umani-ness.

The specially-imported noodles, on the hand, tends to soak up the broth quickly. We were told that that’s the way the bowl of ramen should be enjoyed. Gratefully, the noodles still retain the moisture and it is not too dry. If you need more soup, you can top up $4 for an extra serving.

Homemade with a precise egg-to-flour ratio, the noodles are comparatively curlier than the usual ones and slightly chewier.

Instead of sliced pork, Seizan Uni Ramen presents the Kumamoto Wagyu Ramen $20 with the Kumamoto Wagyu beef chunk. The ramen is a mix of dashi with a stock made from Kumamoto Wagyu beef tendon and vegetables. It is characterised with notes of beefiness and a slight sweetness.

The rest of the ingredient toppings are the same as the Uni Ramen.

The third ramen offered by Seizan Uni Ramen is the Dashi Somen $18.

You can taste the original flavour of the dashi here, lighter and cleaner in taste. It’s savoriness largely comes from the generous use of bonito and maguro, further accentuated with Japanese soy sauce, mirin and sake to create the broth.

Some add-ons to your ramen bowl include the Crispy Fried Fish Skin $2, Chicken Kaarage $3, Gyoza (pork or chicken, 2 pieces, $3) and a homemade Volcano Chilli $2.
