JÙN Restaurant at Capri by Fraser, China Square – Chinese Cuisine with a flair

JÙN by Capri by Fraser is Creative Eateries’ newest Chinese hotel restaurant in CBD. Situated in China Square, the chinoiserie-chic restaurant mixes modern decor with oriental elements familiar to locals. Here, tingkats lined the shelves while an extensive wallpaper filled one side of the restaurant with the sights and sounds of Singapore.

We were told that the idea to name the restaurant JÙN (also 俊 in Mandarin) is due to their handsome-looking Executive Chef, which, a pity, we did not get to see that day. Nonetheless, I thought the name was rather befitting of the restaurant for its well-meaning ambience and exquisite dishes that proudly embrace local ingredients.

A bar stood out at the end, with a well-stock display of spirits and liqueurs.

The cocktails are very fancifully done up with carved strawberry roses and sunflower limes. The baristas probably hold a fruit master title under their belt.

The evening begins with the Homemade Ngoh Hiang Prawn Roll and Chilli Crab Rilette Kueh Pie Tee, where the perennial Peranakan snack kicks in with the all-too-familiar Singapore chilli crab flavours.

Take a sip from the Double Boiled Herbal Chicken Soup that would prime your belly for the next course ahead. Needless to say, this nutritious soup brims with cordyceps flower, radix, red dates and goji berry.

The Steamed Broccoli with Pacific Scallops features the succulent bouncy scallops crowned in a medley of vegetables in egg white sauce. It’s light in taste.

One of my favourites is the Char-grilled Pork Jowl Char Siew with garlic chilli sauce on the side. The meats had a nice firm chew to it, with strips of fats prominently layered between. The edges were lightly charred. Overall, it’s a sweet and sinful indulgence.

The highlight includes the Crab Bee Hoon Soup in slippery collagen broth. The sprinkles of crispy preserved radish gave the taste more dimension.

Desserts were tastefully done and stole the limelight with the Baked Chempedak Crumble, Warm D24 Durian with Filo Pastry and Double Boiled Tianjin Pear served cold.

And, did I mention how beautiful and stylish the hotel looks?

The floor-to-ceiling fence is actually shaped after the abacus too.
