Glasshouse by DHM at Robinsons The Heeren features 4 eclectic dining spots

Glasshouse by DHM sprawls a two-storey corner at Robinsons The Heeren, featuring four dining concepts under the Déliciae Hospitality Management (DHM). Namely &MADE Burger Bistro, Ange Café, L’Entrecôte The Steak & Fries Bistro and Sabio Tapas Bar, these restaurants offer various forms of dining experience catering to different palates and moods.

While Glasshouse by DHM is established in 2017, some of the sister restaurants have already set its roots in other parts of Singapore like Duxton Hill and Quayside Isle as years gone by.

At Glasshouse by DHM, we began with the Escargots de Bourgogne $16  from L’Entrecote where the half dozen morsels baked in butter, parsley and garlic were a gustatory delight. Each bite was a triumphant burst of umami flavours and juiciness, and breads were called in to mop up every last remnant.

Sabio Tapas Bar’s El Pulpo $24 promised slices of the grilled octopus leg perched atop a violet sea of mashed potato and paprika sprinkles. There’s a little spiciness that picked on the tastebuds, adding an element of surprise there. If only the mashed potato were smoothly whipped, it would have wrapped the tender meat in a tighter embrace for a more velvety mouthfeel.

Another from Sabio Tapas bar is the Gambas Al Pil Pil $19. Crunchy crystal prawns were doused in olive oil, cherry tomatoes and garlic slices. It was fragrant and the broth was rich and well-nourished.

Moving on to the mains, we had the XXL Entrecôte Steak $54.90 with the legendary secret sauce, free-flow crispy golden fries (these were so good) and green walnut salad.

We had it medium but it came out to be more well-cooked than expected. We were told that it’s best to request for medium rare if we wanted it medium.

Juxtaposing these humongous hunks of steak to the Trimmed Entrecôte Steak $34.90 I once had in the outlet at Suntec City, the later was more tender and better-portioned for the sauce to coat nicely around it. I would recommend the smaller cuts instead.

Till 17 February 2019, tuck into the Golden Piglet Burger $22 featuring a scrumptious five-spiced marinated pork shoulder topped with red onion swirls and an edible gold leaf. The crispy lotus chips served on the side was addictive enough to win applause among us too.

The Iberico Pork Cheek Pasta $24 from Ange Cafe charmed my socks off. Its asian-fusion demeanor is spun off from braising the finest Iberian pork in soy, Saigon cinnamon with cloves, star anise and Thai chili while served with Strozapretti, a kind of elongated pasta, cooked to the right kind of chew, and glossy with shine. 

The pork cheeks arched confidently on the pasta and could be sliced beautifully without those ominous stringy membranes. There’s the presence of salinity in the flavours which gave it a muscular boost. Frank in flavour, this dish was straightforwardly delicious and comforting.

Desserts were the Artisanal Housemade Choux Pastry that came in a myriad of fillings, and the signature Churros with Chocolate Sauce, which topped my list of best churros in Singapore.
