Black Marble (Raffles Holland V Mall) by Chef Otto Weibel brings sizzling Grilled Meat & Seafood to the communal table

Indulge your senses and pamper your tastebuds at Black Marble, the latest brainchild of renowned F&B veteran, Chef Otto Weibel. Following the successful revamp of Otto’s Deli Fresh late last year, Black Marble promises to wow diners with a mouthwatering selection of meats from Australia, Japan, and USA, char-grilled to perfection at this sophisticated restaurant.

At 73, Swiss-born Chef Otto Weibel is certainly not resting on his laurels. The newly-opened farm-to-table restaurant draws on decades of combined experience with Head Chef Jay Siaw to bring out the best of flavours and the heartiest of dishes. With every element made from scratch in their kitchen, Black Marble spares no effort in executing each dish perfectly.

Whet your appetites with a Baked Brie Cheese $16 served with rosemary, acacia honey, fermented garlic, and toasted baguette. The medley of flavours is rich yet not overpowering.

Although the restaurant’s interior is boldly emblazoned with the logo of a cow, diners will not find themselves short of options from the sea. A heart-warming Lobster and Scallop Saffron Risotto $34 graces tastebuds with a heavenly plating of creamy Italian risotto and sweet, succulent Boston lobster and scallop.

Diners leaning toward a more communal style of dining may indulge in the aptly named From The Sea Platter $88, which serves up a treasure trove of aquatic goodies including salmon and octopus.

For a true treat for the senses, look no further than the 45 Days Dry-Aged Bone-In Ribeye $85 paired with homemade black pepper port wine sauce. The tender, juicy beef, a product of a painstaking process involving dry aging the beef with Himalayan salt, melts completely in your mouth, releasing the full flavours of this magnificent cut of meat.

The Grain-Fed Lamb Rack $38 is an alternative “from the land” that is not too gamey and cuts like butter. Pair this with a refreshing chimichurri mint sauce that compliments the meat’s richness.

End your meal on a sweet note with a Burnt Banana & Buttermilk Waffle $12. The chargrilled banana torched with brown sugar and waffle is delightfully soft, while the use of pop rocks on the peanut butter ice cream adds an interesting texture to this dessert.
