Afuri Ramen – Popular MSG-free Yuzu Ramen & Dumplings at Funan mall

Since Afuri Ramen‘s opening at Funan mall, the queue has been consistently long during peak hours.

Taking centre stage in each Afuri bowl is the yuzu, which is infused in the chicken-dashi broth and also as a garnish on top. The addition of the citrus fruit gives the ramen a little zestiness and refreshing mouthfeel. It’s unique because the ramen we usually get in Singapore, are pork-based and heavier on the palate.

Afuri prides itself in its yuzu ramen and dumplings.

There are three types of bowls under the Yuzu category – Yuzu Shio Ramen $15.90, Yuzu Shoyu Ramen $15.90 and Yuzu Ratan Ramen $15.90.

Amongst the three, the Yuzu Shoyu Ramen has the most prominent yuzu taste. The broth is also light and easy-drinking. It was love at first sip. Compared to the Yuzu Shio Ramen, the latter leans towards saltiness.

The Yuzu Ratan Ramen is not as spicy as it looks. It has a touch of spiciness and tangy yuzu flavour to it. I like that it is more flavourful than its counterparts in general. As for the slice of pork, it has an almost one to one ratio of fats to meat.

Even the wheat noodles are also really delicious. They are made from a blend of premium Hokkaido whole grain wheat “Haru yo Koi” and rye, thin and not as chewy as the usual springy ramen.

The Crispy Gyoza $5.90 is equally amazing.

Some magic must have gone into the making of the dumpling skin, for it to have melted in my mouth in one bite.
